Annette's Palmiers

Puff pastry and sugar, and nothing else. Roll it, chill it, slice it, and let the sugar do the rest.

Makes about 20 · Active 15 minutes · Chilling 30 minutes


Ingredients: 1 sheet puff pastry · plenty of sugar

Method

  1. Sugar the counter generously, lay the puff pastry on it, and sugar the top too, pressing it in.
  2. Roll both long sides toward the center until they meet, like two scrolls sharing a spine.
  3. Chill the roll 30 minutes so it slices cleanly, then cut it into slices a finger thick. Lay them flat on a lined tray, with room to spread.
  4. Bake at 200°C (400°F) for about 12 minutes, turning them once when the underside is caramel, until both sides are golden and glossy. That is all they ask.
